And when you are using UPNP, your Snakeoil OS machine becomes a 'Renderer'. i.e. it only plays back music. Your HDD needs to be mounted on a UPNP server. It sort of works like this:
- Have a UPNP server with all your music (this is where your HDD should be)
- Use umpdcli as the server player on your SnakeoilOS
- Use bubble upnp and select songs from your UPNP server and play it on your SnakeoilOS machine
When you are not using UPNP, and just want to use SnakeoilOS like a traditional music player, you can plug the HDD into your computer, and go to the music library. If everything works as expected you will see your USB HDD pop uip in the 'unused partitions' section. Click the add button, and click 'Save'. More details are in the manual here. If you want to use JRiver for UPNP, then you can mount the HDD on the Snakeoil OS machine, and then control it with Bubble.

Ok I was hoping to use this as a server like Daphile as I have a RPi3 as a renderer that then goes onto to my USB DAC and I use Bubble upnp as a controller .
I have plugged in my HDD into Snakeoil OS and it cannot be found .

I havn't actually tried this setup for a while as Snakeoil OS these days is primarily designed specifically for playback and not to serve music.
However, you should still able to do what you want. Choose either JRiver or Logitech Media Server (LMS) as your server player. With LMS you may need to install a DLNA/UPNP plugin.

Also, generate a diagnostics file, and attach it to this thread. Hopefully from these two information I can find out what the problem is.

Presumably you want to use the RPI as the player and it's i2s output to your dac...
You can use Snakoil LMS as the Server and run MoOde on your Pi using it's squeezelite player as the renderer.

Another option now (from 1.0.11 and onwards) is to use minimserver. Then Bubble UPnP controller can stream music from Snakeoil OS PC to the RPi3.
Next version of Snakeoil will support running MinimServer (server)+ upmpdcli (renderer) in one machine, making it a all in one UPnP media PC.
